Tasting Notes
Boysenberry, sweet black cherry, clove on the nose. The palate is soft and lush with black cherry and spice with a refreshing bright undertone.

Pair this full-bodied, elegant wine with red meats, poultry and plum sauce, aged cheeses, mushroom dishes, and pastas!

Drawn from our estate founding blocks, this Merlot reflects the original vines planted on the estate by Casey McClellan and his father in the 1980s. Having worked with these vines for three decades, we are able to craft a wine that reflects the pedigree of our estate vineyard and the complexity and grace of the appellation.

In the early 1980s, Casey and his family planted the founding blocks of their future winery, 21 acres of Merlot and Cabernet Sauvignon. Eight years later, the McClellans established Seven Hills Winery. Over the past three decades, the winery’s endeavors have continued to reflect an unwavering commitment to creating wines that showcase the distinctive terroir of Walla Walla Valley.
Not only is Casey McClellan a fourth-generation farmer in Eastern Washington, but also he understands the commitment needed to help a community thrive. Over the years, Casey and his wife, Vicky, have promoted a spirit of collaboration, not just between Walla Walla Valley growers and winemakers but within the whole community.
As proprietors of one of the area’s first vineyards, the efforts of Seven Hills Winery have helped strengthen a community that values environmental stewardship to protect the future. For the past 15 years, we have practiced sustainable agriculture in order to be responsible guardians of the land, and currently hold LIVE and Salmon Safe certifications for our estate SHW Founding Vineyard.

Red Mountain Thick Skinned 2018 Bordeaux Red Blend: $45

Varietal Composition: 60% Cabernet Sauvignon, 33% Malbec, 7% Petit Verdot
Appellation: Red Mountain, Washington
Vineyard: Heart’s of Hill Vineyard
Barreling: Handpicked and barrel aged in 50% French new oak
Cellar Aging: Drink now or cellar for 10-15 years
Tasting Notes
Cocoa, sweet coconut, dark berry, vanilla, and cherry fruit. Bright cherry followed by chocolate with hints of caramel and toast. Firm mouth-filling tannins coat the palate.
Food Pairing
Try with sausage and peppers, grilled meats, barbeque, aged cheeses or truffle risotto.

Standing apart from the surrounding hills, Red Mountain’s southwest facing slopes encourage the grapes to ripen and develop their deep, dark skin color. It is during the fermentation process that these thick, sun-ripened skins reveal the distinctly lush textures and flavors locked inside. A Bordeaux style blend of bold character, Thick Skinned represents everything that Red Mountain has to offer.
