Process
Vinification by maceration with controlled temperature at 24°-28°C. After malolactic fermentation, refinement in French tonneau at least for 3 – 6 months.
Tasting notes
Aroma: Rich aromas of berries, with hints of vanilla and oak.
Palate: On the palate, it is velvety and smooth, with persistent notes of vanilla, complemented by flavors of dark fruit like plum and blackberry.
Finish: The finish is marked by a lingering smoothness and subtle oakiness

This wine pairs wonderfully with pasta dishes, grilled meats, and aged cheeses.

Varvaglione 1921 has been making wine for almost one hundred years, spanning four generations of the family. Today, it is one of the biggest and fastest developing companies in Puglia, steadily increasing the number of bottles produced and the quality of its wines. The company is based in Leporano on the Gulf of Taranto, in the famous Salento region.

Process
Harvest is destemmed. Vating for 2 weeks. Pumping-over several times during the alcoholic fermentation.

Palate: Soft at the beginning, becoming robust and warm. It is a full-bodied wine with pleasant acidity.

Chantepierre estate has been set up in Tavel from more than 3 centuries ago. Indeed it’s been farmed by the same Paly family since the XVIIth century.
This structure is co-managed by Anne Luce Coulomb Paly and Christian Paly, sister and brother.
The 65 hectares domain mainly produces Tavel, Lirac and Côtes du Rhône.
The diversity of its Appellations and its grape varieties allows Domaine Chantepierre to produce three colors of wine.
The diversity of the location of its vines gives it the possibility of working on different terroirs: sandy hillsides, limestone scrubland and clay plateaus, rolled pebbles.

Process
Direct pressing with pneumatic press, wine making in vat with temperature control (max 17°C). Ageing of 4-6 months in stainless steel tanks before bottling.
Tasting notes
Aroma: Fruity structure of white peach, pear and white flowers (iris, jasmine).
Palate: Round and fleshy attack, almost juicy, which quickly evolves towards freshness and a thirst-quenching acidity.
Finish: Very pleasant wine, with elegance, balance and minerality.

Pair this delectable treat with Creole chicken and plantains or pan-fried artichokes with smoked salmon.

La Réserve Saint Dominique was born from the desire of Eric Bonnet, winemaker in Courthézon – AOP Châteauneuf du Pape, Côtes du Rhône, Cairanne – La Bastide Saint Dominique – to offer his customers a selection of Crus and Wines from the Rhône Valley to complement the range he produces.
True to its cultural ethics (for the benefit of preserving balances), the vintages of the Réserve Saint Dominique give pride of place to fruits, to a beautiful balance, in short to the delicacy. Raised for the most part in stainless steel vats to favor the crispness of the wines, the proposed AOPs highlight the typicality of each terroir and are carefully selected for the greatest pleasure of the consumer. The range is composed of the prestigious appellations of the south of the Rhone Valley, of “Valeurs-Sûres” and of a few rare confidential bottles, particularly in White.

Process
Destemming in totality followed by a maceration of 5 to 6 days at low temperature in order to preserve the aromas and the color of the fruit. Daily pumping over is done during the fermentation (indigenous yeasts). Then follows a soft pressing with selection of the
best juices. The grape varieties are vinified separately in vats for 3 months and then transferred to 500 L barrels where they are aged separately for 8 months before being blended.
Tasting notes
Aroma: The wine opens with inviting aromas of ripe red fruits such as cherry and raspberry, complemented by subtle hints of spice and earthy undertones.
Palate: On the palate, it is medium-bodied with smooth tannins and a balanced acidity. Flavors of plum, blackcurrant, and a touch of vanilla from oak aging are prominent.
Finish: The finish is long and satisfying, with lingering notes of dark fruit and a hint of pepper.
Food pairings
This wine pairs wonderfully with grilled meats, such as lamb chops, beef steaks, and pork tenderloin. It also complements a variety of cheeses, including aged cheddar, gouda, and blue cheese. Try it with vegetarian dishes such as mushroom risotto or lentil stew.

The requirement for the quality of the grapes is largely due to the rigor of the work carried out throughout the growing cycle. Our vines are cultivated with respect for biodiversity , we work ever harder on limiting pesticides and fertilizers. It is therefore natural that in 2019, the estate obtained its HVE 3 certification , which formalizes the work of the vineyard for several years in an environmentally friendly manner. Thus, the HVE certification allows us to reconnect with positive and sustainable practices , while meeting the strong expectations of consumers, concerned about the quality of their food and the future of the planet.

Process
1-4 days on solids before wild yeast start to ferment. Fermentation in stainless steel tanks. 6 months aging in French oak barrels and steel tanks. Our winemaking is focused on minimal intervention with the use of wild yeasts, malolactic fermentation, lees contact and subtle oak to give our Chardonnay depth, complexity and personality.
Tasting notes
Aroma: Ripe nectarine, fig and nougat aromas with accents of wild honey. These are supported by freshly cut hay and cinnamon spice.
Palate: Layers of flavor build across the palate reflecting the fruit, natural fermentation and ageing on yeast lees. The slightest hint of oak comes through as cinnamon and spice.
Finish: Balanced acidity gives the wine a refreshing finish.
Food pairings
Enjoy with avocado pasta or steamed salmon and sugar snap peas served with rice, toasted sesame seeds and ponzu dressing.
