This rosé is made in a more serious, complex style that will appeal to all levels of consumers, including wine aficionados. Please do not serve it too cold, ideally at 48-52F, in order to fully enjoy the complex bouquet and delicate texture.

The 2024 Dossier Rosé strikes the perfect balance between hedonistic fruit elements and the savory, almost umami-laden mineral and floral elements. This is a deeply packed Rosé with energetic acidity and a beautifully textured palate. The bouquet sets the stage with complex aromatics of blood orange, pomegranate, red currant, succulent herbal tones, and hints of rose petal and honeysuckle. The palate has well delineated notes of red currant, strawberry, just-ripe raspberry, and satsuma peel with nuances of dried herbs, rose petal, and saffron. This wine is beautifully focused with a long, vibrant finish that echoes tones of blood orange, chalky minerality, and white flowers.
Food Pairing Suggestions!
- Think shrimp scampi, seared scallops, oysters, or seared tuna—the wine’s crisp acidity, stone‑fruit, and mineral notes from concrete aging balance peaches, grapefruit, and seafood beautifully
- Enjoy alongside prosciutto, salami, or a charcuterie board. The wine’s vibrant fruit and refreshing acidity cut through salty, savory flavors with ease .
- Ideal with tomato salads, bruschetta, ratatouille, or Mediterranean mezze. Its bright acidity lifts herb‑and‑tomato flavors and enhances olive/herb combinations

Tasting Notes from Them to You!
A highly structured wine at this point in its young life. A deep nose with whiffs of Red Mountain dust. Iron and stones comingle with black berry fruit on the palate leading to grippy tannins and a long finish. Decant to allow the deep aroma to blossom or better yet, tuck this one away in the cellar for the wine to reach its full potential. Oh, the wine that awaits the patient!

- Beef (grilled steak, roast beef, filet mignon): The tannins cut through fat while spice notes complement the savory crust .
- Venison or lamb (herb-crusted or roasted): Leaner game meats pair beautifully, enhancing the wine’s earthy, herbal character
