Champagne Paul Dethune Grand Cru A Ambonnay Brut

70% Pinot Noir & 30% Chardonnay

Food Pairing

• Blanquette of sole and scallops with morels.

• Pumpkin velouté, Vattel five-berry chantilly cream, smoked bacon chips.

• Perfect egg, diced and emulsified ceps, Comté cheese petals 18-24 months.

• Pan-fried fresh foie gras, parsnip puree and gingerbread crisps.

• Smoked guinea fowl supreme, broad beans and candied tomatoes, rosemary jus.

• Grilled pork pluma, sweet potato with Timut pepper.

• Slice of leg of lamb, sautéed chanterelles and buttered potatoes.

• Grilled beef fillet, spring vegetables and morels with herb butter.

• Like a goat’s cheese nougat with toasted hazelnut pieces and orange reduction.

• Monk’s head flowers, comté cheese aged 18-24 months.

“Pierre learned to walk in the vineyards alongside his father Paul, who himself continued a line of winegrowers started in 1610. After his great-grandfather Léon, his grandfather Henri and his father Paul, Pierre followed his own path… in the heart of pleasant grassy vineyards in Ambonnay. Thus aware of having inherited a land and cultural heritage born from the courage of their predecessors, Pierre and Sophie Déthune honor it and are attentive to the paths they take… as well as to the mark they will leave. They practice the demanding profession of Harvester-Handler ,  Independent Winemaker with a diligent approach to sustainable development*. Considering the lineage that extends behind them and that which is emerging on the horizon, the couple considers themselves as the generational relay of a timeless heritage.
