It’s hard for us to keep Caleb Foster’s wines out of this club—it’s really what it was designed to spotlight: excellent, low-production wines from outstanding boutique wineries. Besides, there are such limited quantities that this is practically the only way to get this wine into the hands of those who care most for it! This powerhouse Cabernet-Syrah blend probably needs 2-3 years in the cellar to allow the integration of the tannins with the luscious fruit. We have more available at $47.00, but don’t delay too long, as this wine is one of Buty’s most popular offerings.

2004 Couvillion, Columbia Valley Cabernet Sauvignon
Yes, another terrific Walla Walla winery! Winemaker Jill Noble trained with John Abbott of Abeja and Marie-Eve Gilla of Forgeron, and it shows in this elegant, rich, silky Cabernet from Dionysus vineyard. Named after an easygoing French Canadian friend, the wine features wonderful dark cherry and plummy fruit and soft, spicy tannins. Jill recommends that you try it with prime rib topped with blue cheese. Ready to drink now, it is a great value at $29.75. Although only 390 cases were made, we can get a little more.
